How to enable skip weekends, and weekends will be hidden within the Gantt chart, and when any tasks with start or due dates, or milestone dates landing on weekends, will be pushed to the closest available weekday.

You can't change dates from properties dynamically if they fall in weekends and you can't move items (or select tags) based on a date.

Why are you choosing weekends for a date instead of choosing the correct day for a task in the first place? If you have to choose a date for a task, just select the correct one.

You could try automation with external tools like Make or Zapier. With that you can change tags or dates the way you want, but in Notion, you can't.
