What if I change something else than the "status"?

If I change something else the "Last edited time" will be updated and not related to the last "status change". Do you have a way to show the date when the status was changed?
I hope I was clear enough..

There is no last status change option in Notion.

You will need external tools like Make or Zapier to create an automation that does that.
